Barley straw pellets are good for shrimp. Just don't let it accumulate too much in your tank. If they get under your moss pads it will cause problems.

Reset your tank. The only way to get rid of scuds or any living creatures you do not want in your tank is to microwave or bake your substrate in small batches and let dry out.
