I'd say go for it. Honestly a nano isn't hard if you aren't trying to keep demanding corals. Do shrooms, palys, zoa's, gsp etc etc. I spend less time on my reef tanks then my planted tanks.

Stress does not cause ich, that's old urban legend stuff. About the dead leaves, they wouldn't be adding to nitrite readings, it would be more of a phosphate reading.

Personally I've never seen a clutch of eggs eaten by snails unless the parents abandoned them. Typically in all my instances the fish keep the snails away. I think you'll be OK.
