Ive done it and it looks nice but it is difficult to keep clean from debris unless you get creative.
The best way I found to do it is to assemble a carpet using a lot of flat lava rock pieces (bigger the better) seeded with moss or a rigid plastic mesh and set them in the tank close together. This way, when the moss needs a trimming and cleaning you just remove all the pieces, trim, rinse and set back in place. Sad to say but "most" carpeting plants like good light to stay low and tight.

Marselia minuta, Echinodorus tenellus 'narrow' and dwarf saggitaria all can carpet nicely in low light given enough time. Growth is just slow in low light.
