What would you do

Pics of my 55 (Shrimp Tank), 75 (Tetras), and 125 (Angels). My 125 needs some rearranging. Behind the tall grass in front is actually Driftwood with anibus attached to all of it. Can't even see it. Any Ideas on re-scaping with current plants in 125. I'm definately taking tall grass from front to replant in back. I can grow those stem plants with no problem but they always get to tall and tangled from the brown blob that forms from side shoots. How do you trim these to keep them small enough so they look like bushes. Do you top them and replant tops and get rid of bottoms or just trim as they grow. I just cleaned out stem plants and replanted which I seem to have to do every two weeks. The 1st 2 pics are the 125, 2nd three are 75 and last 3 are 55 gal. Thanks for looking.
