i do have some maki that i use fresh fruits inside of it, and a coffee crusted tuna with spicy chocolate sauce, and you can always use those soypaper, make into temaki, replace the rice with whipcream, and then top off with some chocolate sauce or whatever u like...

try using sticky glutinous rice with fillings of sweet mung beans with sprinkles of sesame or caramelized coconut with nuts for the filling... That's a bit more asian.


The Spicy chocolate sauce sounds interesting, like a molé.

i am more into fusion style, even tho its not something i would go out and order... the thing with sticky rice is, it becomes hard when cold, unless u smash it or mix it with some other rice... for health food freaks, i do use purple sticky rice mix with brown rice or akai, not my favort things to use but still workable...
mistergreen: i been thinking and looking at your pic/icon for a long time now, and i still can't figure out what kind of fish it is...

I'm a bit of a purest... You can take fusion too far... I think you have to steam the sticky rice for it to be proper.

You know, African food is pretty unexplored. Etheopian is quite good but everything else is a mystery. I quite enjoy South American and Carriben?sp food too.

And good question on the fish. I don't know. I bought it and painted it while I was living in NYC.. Maybe it's a local fish.. It was pretty good.. I might have made gumbo out of it...

Unless you're in North Africa (access to the spice trade and Moroccan culture), true African food is pretty basic, that's why. Outside of wild game (zebra, wildebeest, warthog, eland and hartebeest are AWESOME) which is typically not eaten as much by locals any more b/c they can't afford hunting licenses...

It's typically beans and corn or flour cakes (ugali in Tanzania, nsima in Malawi, those are the only 2 places I've been) plus whatever meat they can afford (goat, beef, fish or chicken). Stewed or slawed veggies on the side. Rice is a bit more expensive. Rice also needs to be eaten carefully b/c of the rocks. My favorite dish though was red beans and bananas with rice- yummy!

I bet the ivory coast could be interesting.

it doesn't matter how sticky rice is made, it will become hard when cold no matter what... a bit higher then room temp is fine

oh wow, from the small pic, can't tell it was a painting, very nice, i thought it was a fish maybe u caught, dressed it, getting ready to cook it, but some how decided to mount it instead, lol...

i do have a desert banana maki, its banana tempura wraped in thinly sliced (once again thinly sliced item) pound cake, top it off with coconut sauce

If you used polenta-like cornmeal instead of pound cake, and red bean sauce instead of coconut, that might give you an African flavor? LOL

I'd love to visit the Ivory coast. Shoot, I'd love to live anywhere in Africa except along the Sahara.

hmm, never had african food before... hmm, but using something like cornflakes into sushi, that be interesting... instead of crispy tempurea flakes, but use crushed corn flakes

Yeah nutty.. but not really... it's distinctive..

Oh, try plantain chips too.. Lots of of afro and latin foods use plantain. To me it nothing too distinctive but it's good none the less.. Tastes like potato.

I like cassava chips better. Plantain chips would definitely bring in banana flavor though. Cassava chips are popular in South and East Africa, IDK if they're actually grown in Africa or imports though?
