theres also hmm maguro tataki, thinly sliced, serve on a bed of thinly sliced (gah, why must everything be thinly sliced!!!) red onion and micro greens, top it off with crispy garlic chips and yuzu-ponzu sauce

so i was bored at work, years ago, decided to make those, and believe or not, people would pay 100 bucks for it, sold one at end of the shift...

About the only foodstuffs I find unpleasant I have encountered at sushi restaurants...they are:

raw squid (I can't do it, it's like chewing rubber..it just gets bigger and bigger in your mouth)...and uni (sea urchin roe - tastes like a flatulent [at least the uni I've had!]).

you know how a lot people like to suck on the heads of the crawfish.. uni pretty much taste like that but more sweet, with hint of the ocean, as for squid, it must be done right to taste good, a few cuts here, few cuts there, then either dunk it in hot water/brooth or sear it with tourch

I can do "mustards" - like lobster and crawfish brains...but the uni I had was just awful...maybe i got a bad piece? as for the squid..this was straight up raw squid with crosshatches cut (I assume to make it more tender)...it didn't work for me...or anyone else at the table...

Perhaps I should give uni another try?

Wow... 100 bucks for something I could swallow in one bite... People amaze me on how they can blow money on some things.

For $100 bucks I want to be carted out of the restraunt in a wheel barrel because my legs won't support the weight. That little plate of sushi would just tick me off.

any sushi made with fresh fish and perfectly made rice are great.

Uni is pretty good but I think I'm a little allergic to it. It should taste like what mahoro said. It's the sea urchin's ovary, not roe.

I can't do uni or octopus/squid.

I had sea urchin once (not roe) 'on special' in a NYC joint. I put it in my mouth and gagged. Not sure if it was the fact that it was sea urchin or the fact that it was on sale (or both), but I do know it will never cross my lips again (just like single malt scotch....never again, and my name's MacClellan!).

The latter is just too rubbery. Doesn't do it for me.

mistergreen: I think you're incorrect. It's roe...almost positive...no...definitely positive...
though I think it includes both ovaries and testes...

I personally don't really like most of the made up rolls... but heaven is found at the Tsukiji fish market in Tokyo. The freshest, bestest raw fish you ever had, or at least, that I ever had. Too bad they only serve it as breakfast, and too bad I live on the wrong side of the ocean to go there often... and am too poor even if I didn't.

There's a place in this town that deep fries some of their sushi. It's not too bad, but kind of odd, IMO.

Why is it that you don't see much chirashizushi (sort of a "sushi salad") at restaurants?

chirashizushi was ment as poor man's sushi, its usuly just scraps and such, it wasn't til much later on that sashimi cuts was used..
