one of my favorite rolls is called a volvano roll.
many places make this item differently so i'm going to give you what i think is the only true version.

its basically a califonia roll topped with baked seafood which we call dynamite.

califonia roll = crab, avocado, and cucumber. i like to add cream cheese cuz i love the stuff. finish the roll off with masago. i leave off the sesame seed.

dynamite is the baked seafood part of the dish. it is scallops, crab, masago, and kewpie mayonnaise. take about 2-3 jumbo scallops, 3 crab sticks, 2 tsp. of masago and chop finely. add mayo and stick it in the toaster oven until cooked and place on top of the california roll. when making it for myself, sometimes when i'm not lazy, i'll add chopped white onions to it.

eel sauce goes great with cooked sushi so i drizzle some on top.

ever tried making rolls with rice paper?
one good recipe is tuna mixed with kimchee sauce. add a little bit of honey and lemon to the kimchee base though, or it'll have too much of a kick. chop the tuna finely, add kimchee sauce. soak and lay out the rice paper. place tuna down. then add a good bit of tempura flakes for crunch. use ponzu as the sauce.

there's lots of great stuff out there but i dont want to give away the recipe of my sauces chef's are kinda picky like that. but this is a pretty basic dish that you can make at home or easy enough to ask your friendly neighborhood sushi chef to make for you.

I love to eat sushi, especially here in Hawaii where the fish is fresh! I love to eat spider rolls, spicy tuna and lots more.
There are many creative sushi dishes, you have to find one that intrigues people in that culture, except for the people in Hawaii. Its what we call mix-plate!

I just like sashimi mostly tunas/ salmon for hte most part with lots of Wasabi and ginger Its hard to get fresh sushi though living in the middle of the US.

well, there is 2 kind of rice paper, one of them is the viet. style, where it comes dry and you have to soak in water, ther other one comes in sheet, looks like a soypaper but much thicker, so its pretty much nori sheets made from rice...

man, the whole point of this topic is to SHARE... anyways, any real chef won't mind sharing whats in their secret... the real secret is how you make it, the steps and the process

While I was in Peru, I was peer pressured into trying the ceviche. It was great! I don't know if that would count as a sushi item, but it's good nonetheless.

Here are some rolls I order all the time:

volcano roll
deep-fried shrimp, cream cheese, avocado and jalapeño; topped with scallops cooked in spicy sauce and scallions.

ford’s filler
deep-fried shrimp, crab, asparagus and eel; topped with tuna, yellowtail, salmon, and avocado

brookside roll
tuna, crab and asparagus topped with eel

Ford's filler, interestingly enough, was actually created by Harrison Ford's son Ben who opened a restaurant (called Fords Filling Station) next door to the sushi bar I go to...his restaurant didn't last too long (maybe it was the $30 hamburger), but the sushi's still there...

And I love dynamite rolls, but the best I had was at a place in Fort Collins I used to frequent...

thats pretty cool, i've made sushi for tommy lee jones, alan rickman and yao ming... and damn he is super tall, i am six foot, i still have to look WAAAAAAY up to see his face standing next to him...

My favorite 'designer roll' is the Rainbow Roll: Extra long california maki covered with various netta - e.g. mackerel, tuna, salmon, etc. and always ending with a shrimp, and all is covered with roe. The maki is cut such that each piece contains more than one type of netta.

No, ceviche isn't sushi. It is essentially seafood 'cooked' in acid. It is lovely though! I lived in Panama for nearly three years and eating the stuff constantly, developed discriminating tastes - not all ceviche is created equal, but the best is simply excellent!

hamachi ceviche is the best, cut thin slices, then top it with paper thin slices of key lime and jalpeno, and yuzu sauce...
