Take a close careful look at feeder blocks if you decide to go that route. I looked at them, and they appeared to have quite a bit of copper, not good for shrimp.

Definitely not doing feeder blocks, I tried those back in the "clown puke gravel" phase. Makes a mess in the tank.

About the livebearers, I'm not sure that they would give a constant supply of fry. If there's no external source feeding them, they might not produce so many fry.

I would side with the autofeeder (maybe Eheim? I haven't tried them, but since everything else Eheim produces is very reliable... I'm sure there are some user reviews.) You could monitor it for 2 weeks to see if it does anything strange, but they would most likely be more reliable than livebearers.
