x2 on sumo although you may have to find a pH controller elsewhere, not sure if he sells them. You can find cheaper setups out there but if you ask me the extra money spent is worth it when it comes to a regulator.
Well yes they do.
But if you are going to run a fermenter why not be making wine or beer with it.
You will not need a vacuum to collect it. The CO2 is produced with more than enough pressure.
My experience with the guys at Sumo was outstanding - extraordinary follow through, conscientious service - and I am very pleased with the unit I got - the regulator is top notch, and my needle valve/bubble counter dials in very precisely and easily. They are found here:

My personal feeling is that both companies produce a very high quality product, I really don't think you can go wrong with either, and ultimately, as with everything, it probably comes down to personal preference. Good luck.
Don't waste your money on a pH monitoring system your much better off getting a quality needle valve
