I got a U.S. General flow gauge CO2/Argon regulator part 47259. I was told that supposedly it's a two stage regulator. I'm not entirely sure the person knows as he sold me a 2.5# tank saying it's a 10# because someone else told him it was. I'm wondering if it's truly two stage or is it just two gauge and one stage? I can't seem to find much info on it.

From what I just googled, you have a single stage regulator that used to be sold at harbor freight. It has a flow gauge and not a pressure gauge which is what you need. You'll have to change the gauge. I estimate that it's worth 36 dollars new. Harbor freight no longer sells this one but the current one they sell is going for 36 dollars.
There's no reason why you can't use it. Swap the gauge and you should be set. You can even use the current one but it will be hard to tell precisely how many psi you're using. Dual stage is better but people overrate the importance of it.
