In the sticks of CA where I grew up we called them crawdads. Still do

if i'm in the crick dey crawdad.

if i'm at home then they are crawfish

and sometimes i enjoy the word crayfish

I call them crayfish (which actually entered English from Old French crevice and only got its ending through folk-etymological analogy with other "-fish" names).

Other fun regional names: crawldad, crawdab, crawdaddy, crawdabber, crawpappy, crawjinny, creek crab (see here).
