cycling question

Hi everyone
Little over 2 weeks ago I had a c02 dump in my 56 gallon column tank. I lost almost all my fish. I was able to save a few and put them in my 26 gallon. I couldn't catch one gbr thats still in the 56. I did a couple of wc the day of the dump since then no wc. I did clean out some of my filters in tank water. I switched from stress coat to prime. I added chimipure and I alsoaadded some night out. All of that was done the day after the dump. Since then I've only topped off and fed my gbr every other day. So yesterday I test the water and my ph is 6 its been 6 since the dump (not sure what it was before I didn't test b4) nitrite has been 0 for over two weeks. Nitrate changed from 0 to 5.0 yesterday so I figured finally some movement. I test this am and nitrate is back to 0. So going on 3 weeks and im in the same spot I was the day after the dump. Im I missing something?
Thanks

I presume there are plants in the tank.
One gbr in a 56 gallon planted tank probably won't generate anything measurable.

Hey everyone. I went to Pacific and bought several more plants. I also bought some amonia chips. I was told the ammonia chips wouldn't slow down my cycle? I was told to leave it in for a month? I wsd also told if my ammonia stays down all week with the ammonia chips I can add fish next week?
Thanks
