Assuming it was the peacock eel, not the fire eel. Fire eels reach 3 feet in which case, it is easy for it to gobble a slender bodied fish.

All three are appropriate. I see no reason to the contrary why blue rams and discus can't mix well with plants unless the plants you get lack tolerance for higher temperatures.

Discus need the temperature around 84-86 in order to avoid several health issues. The lower the temperature, the more vulnerable they become. Blue rams are absolutely fine in temps exceeding 83.
