Assuming it was the peacock eel, not the fire eel. Fire eels reach 3 feet in which case, it is easy for it to gobble a slender bodied fish.

Discus don't belong in a 55gal tank, they need more swimming room. Eels don't belong at discus temps, either. Discus aren't community fish- as Az said, only certain other fish can survive at the temps they need to be kept. None of the fish you listed would really be appropriate.

With the exception of blue rams and some tetras. Why is it some of these would ever be inappropriate?

Edit: Here's a list of what will work in high temperatures. I've tried plenty of these and most failed to live for a few weeks.

All three are appropriate. I see no reason to the contrary why blue rams and discus can't mix well with plants unless the plants you get lack tolerance for higher temperatures.

Discus need the temperature around 84-86 in order to avoid several health issues. The lower the temperature, the more vulnerable they become. Blue rams are absolutely fine in temps exceeding 83.
