i think ur ok with discus and plants. personally i think rams are ok at that temperature as well. just dont' go past 83 imo. i would stock the rams and discus at around 80-82. find some plants that do well with the lighting and substrate and fertlizers ur planning on using and go from there. also keep in mind that some plants wont' do do well in the temperature listed above. i believe mosses will survive but grow extremely slowly at those temps. ur best bet might be to get some fast growers that can pretty much take any temperature. i believe HM will be able to handle soem rough conditions. my hm survived some pretty extreme conditions before.

so overall ur plant selection will all depend on ur lighting, temperature, and fertilization. pretty much what all of us go through when setting up a tank. i know it seems overwhelming and it sounds like we're shoving stuff down ur throat but this is all the stuff u have to consider if you dont' want to waste your money by killing off fish and plants.
