My favorite 'designer roll' is the Rainbow Roll: Extra long california maki covered with various netta - e.g. mackerel, tuna, salmon, etc. and always ending with a shrimp, and all is covered with roe. The maki is cut such that each piece contains more than one type of netta.

No, ceviche isn't sushi. It is essentially seafood 'cooked' in acid. It is lovely though! I lived in Panama for nearly three years and eating the stuff constantly, developed discriminating tastes - not all ceviche is created equal, but the best is simply excellent!
