Yes, it has been done many times. As you can see by the picture above, they tend to have a different coloration and wavier leaves. Pretty much the only thing you can't grow emergent are floaters.

Wow they look great, how do they react once submerged, do they melt or anything strange or do they just carry on growing - no fuss

Downois are very sensitive plants. Once moved, even from the same tank it will melt a few leaves. From emersed to submersed, the plant will adapt and melt a lot of leaves through the adjustment.
