Question plant question

Are there any large stemmed plants that will grow great with low light no co2 and eco complete substrate?

Do you mean long stems? If so I like pennywort. It looks like a stem of small lily pads and it will grow along the surface of water if you let it. It appears to grow differently depending on how much light it receives. You may also consider rotala or hygrophilia but I don't like the look of them.
