summer veggie garden

It's that season again. We Californians are preparing the household for the tomato hurricane.

The problem is, I still have frozen diced tomatoes from last year. Can anyone give me some recipe ideas for what to use them in? I'm really interested in cultural food. Also, I'm vegetarian, although feel free to suggest meat dishes as the rest of the fam consists of carnivores.

Not soup. Please don't suggest soup. We eat so much tomato soup here, I'm sick of it!

What about tomato curried potatoes as a nice side? Could be vegan and/or gluten free if needed.

Salsa's an easy one and so is bruschetta. If you try making sauce with them, you may need to cook it a little longer to get some moisture out, but it should make a decent tomato puree.

Salsa is better with fresh tomatoes.

That curry looks yummy, Chibi.

I got this book called Too Many Tomatoes, and there is this recipe for African spinach and tomato curry. It's weird because the ingredients include peanut butter.

Its not traditional but adding in a few mushrooms and some tomatoes doesnt go amiss with this soup.
though you did say no soup. Its only a few diced pieces per bowl..
What about a thick curry base for whatever you want.
You basically break down and boil tomatoes into paste, and ass in curry spices.
We like to use it on meat and stuffs...
I'm not planting anymore tomatoes. Mine never stopped this year. They were as fruitful all winter as they were in the summer. And now that its heating up they have doubled in size.. Again..

I use diced tomato in almost everything I make - soups, causes, stews, one skillet meals, I go thru about 7 cans a week. Most things taste better with some 'maters thrown in.

I like Wheat toast, topped with mayo, diced tomatos, mozz cheese, and celery salt. Toasted in the oven for about 10 minutes

with those diced tomatoes you can make a batch of some tasty Pico De Gallo, with that pico you same some tasty queso dip (cheese dip).

you could also make tomato paste, and a base tomato sauce. with the base sauce you can later add whatever seasonings you want to make it a pasta sauce, or pizza sauce, or a pesto sauce.

on of the restaurants i worked at would mix diced tomatoes, chifinad basil Olive oil and pinch of sauce, and we would serve it with cheese bread as a fresh topping.

the fact that your tomatoes are diced already kinda limits you on what you can do with them. if you pm me and remind me i'll go through my books from school (i'm a culinary student) and see what if anything i might have for you.2
